Nobody Will Know Except Wolfgang Puck

Good Morning.

We apparently have Fake News so here's a few recipes that wear party clothes they got at Good Will.

We suggest two cocktails with limited ingredients. None of this seven or eight items that mixologists turn into a magic show.

Trojan Horse

1/2 pint Guinness, cold

1/2 pint Coke or Pepsi, cold

Pour into a glass.

Your women guests may not like the previous beverage so substitute rum for them and serve up a Cuba Libre.

A shot of rum, light or dark

Coke or Pepsi

Pour into a tall glass filled with ice. Squeeze a wedge of lime into the glass and stir.

Our hors d'oeuvres are also a snap and we begin with a pate sort of thing that would make the French shudder but oh well.

8 oz. liverwurst

2 tbsp. butter, softened

1/4 tsp. Worcestershire sauce

1 tbsp. finely chopped onion

2 tbsp. crumbled bacon

1 3 oz. packaged cream cheese, softened.

Put the liverwurst in a bowl and mash it up with a fork. Add the butter, Worcestershire, onion, and bacon and mix in well with your fork. With your hands form into a rectangle, place on a plate, and chill for an hour. Spread with the softened cream cheese and chill for another hour. Sprinkle with chopped fresh parsley to dress it up if desired. Or not. Serve with crackers.

I could eat anything with liverwurst and bacon at least twice a week, but it's hard on the cholesterol. Everything I like is

hard on the cholesterol.

And here is a vegetable dip that isn't much better.

1 lb. cottage cheese

1 cup sour cream

1 cup Miracle Whip

1 package Hidden Valley Original Ranch Dressing Mix

In a blender, process the cottage cheese, then blend the rest of the ingredients one at a time. Put in a bowl. Chill.

Serve with assorted cut up vegetables. Call them crudites.

For an entree we have Cheater Chicken Gourmet.

16 chicken thighs or 8 chicken quarters

1 can cream of chicken soup

1 can cream of celery soup

1/2 cup dry sherry

2 4 oz. packages grated sharp cheddar cheese

Place the chicken in a 9x13 buttered glass baking dish. Mix the undiluted soups and sherry and a bowl and pour over the

chicken. Top with grated cheese. Bake for three hours at 275 degrees. Serves 8.

And for a bit of color, we suggest a Frozen Cranberry Salad.

1 1pound can whole cranberry sauce

1/4 cup lemon juice

1 cup whipping cream, whipped

1/4 cup confectioners' sugar

1/4 cup mayonnaise

1/2 cup walnuts, chopped

Mix the cranberry sauce and lemon juice in a good-sized bowl. Carefully fold the confectioners' sugar into the whipped cream, then add the mayonnaise and chopped nuts. Pour this over the cranberry mixture, but don't mix. Freeze until firm. To serve, scoop onto individual plates with fresh salad greens of your choice.

Here is a ridiculously simple sweet potato casserole.

1 1 lb. 8 oz. can sweet potatoes

1 cup brown sugar

1/4 cup butter

1/2 cup orange juice

2 tbsp. honey

Mash everything together in a bowl and put in a buttered 1 1/2 quart casserole. Bake at 350 degrees for 45 minutes. For this menu, I'd bake it with the chicken for an hour and a half.

And to finish off the foolishness, we have Pineapple Brickle Dessert.

1 No. 2 can crushed pineapple

1 package Butter Brickle cake mix

1 stick butter, melted

1/2 cup chopped walnuts

1 cup butterscotch chips

Spread the crushed pineapple on the bottom of a 9x13 oblong baking dish. Sprinkle the cake mix over it, then the melted butter, chopped walnuts, and butterscotch chips. Bake for 35 to 40 minutes in a 350 degree oven. Serve with a scoop of vanilla ice cream.

Everything can be made ahead of time except for the chicken and that can be thrown in the oven with the sweet potatoes for a leisurely cooking time. This means you can sit around with your drink and actually enjoy your friends for a half an hour and then dish up your dinner that should take no more than a few minutes. This would be if you set the table that morning. To really do a fake, use the good stuff that has to be polished and washed by hand. Serve the salad ahead of time, light a few candles, and put a slice of lemon in the water glasses. Ha ha.

Best regards,

Elisabeth
