My cousin who lives in Mystic, Connecticut - and yes, there really is a Mystic Pizza - responded to yesterday's post about
preparing lobsters by telling me about a different way to treat them somewhat humanely. She fills her pot with only two inches of water and puts the lobsters in, covers the pot, and turns on the heat. The gradual process of steaming apparently makes them just nod off. I am now wondering if adding a little white wine to the water might make the nodding even more pleasant. Just a thought.
